Salt mixes.

I know that this may be a dumb question, but I am honestly wondering about this. Are all salt mixes the same? Like I use instant ocean sea salt, but could I use anything else? Or will that just throw off the salinity and everything?

No you can use whatever you want it's all base on how much salt you add to the water to get your specific salinity. However certain salts have certain things for example some may have more mag, cal, alk, etc etc

If you're going to change salt mixes you need to do so slowly. Most think it'll totally wreck you're system if you just change. I did a hard change. Went from buying my water from Elite where they use Instant Ocean, to making my own using Kent. I didn't have any negative effects, but that doesn't mean you couldn't. Also, search search search. There are a lot of salt threads on here.

I recently switched from instant ocean to redsea coral pro. Been doing great so far!! (3 water changes)

I was using a big generic petco box until I ran out and bought instant ocean.

The petco brand was way better, 1 scoop per gallon and my s.g. Was 1.023...with the instant ocean it varies, sometimes I have to use about a half scoop per gallon, other times up to a scoop and a half.

Salinity is the only one I have used and don't have any complaints. I run a circulation pump and heater when I mix my water and seems fine. Curious to hear about any problems.
