What size bulkhead?

If im doing a 1" overflow(bulkhead) what size bulkhead do i use for my return?

I don't think it really matters. You just have to make sure the return pump doesn't out perform the 1" overflow, you can adjust the flow from the pump by putting a valve on the pump outlet.
3/4" should work for the return.

My 75rr has a 1 inch overflow with 3/4 return. I think that is standard.

If using a 1" overflow, 3/4" Return is pretty standard.

You can bump it up to 1" which will gain a tiny bit of flow (less resistance on the pump), but you lose water velocity.

I usually stick with the 1" overflow 3/4" return mostly because it's easier to tell them apart at a glance and makes sure things get plugged in where they should!
